What is the best way to upload notes for students to write on? I want them to be able to watch my videos from canvas studio and fill out the guided notes that are in my modules at the same time on .

There are a couple of options that I can think of. If the guided notes are on paper, I suggest uploading a PDF file. That can be linked from the content page where your Studio video is embedded. For online note taking, I suggest linking to a Google Doc with your guided notes. I do that often and use the view-only share options for the Google Doc.
Another option is to add /copy to the end of the URL for the share link, which forces the user to make a copy in their own Google Drive.
Here is an example that I have used in my history classes:
https://docs.google.com/document/d/14LjEwXpN09IQ2MGTNLWpzb0Rp0DQ1Wb-Gs0y6bsi-K4/copy
Notice the /copy at the end? That forces the user to create a copy of the document in their drive.
This same trick can be used for Google Slides and Google Sheets.
