Students took an exam that I assigned them but I had to assign it to 1 student and instead of adding that 1 student in the assigned to link I accidentally assigned it to everyone (but closed it immediately). The previous gradebook I have has records of all students who took it but the new gradebook shows that exam was only taken by 1 student. I am unable to enter the grades manually for each student. Is there a way to fix this?

Just to clarify: Did you mean " the gradebook previously showed... but now the gradebook only shows"
You may be able to use gradebook history to see the grades for other students:
The reason you cannot enter grades for other students is probably that the item is now just assigned to one student
