how do you pick your courses? or do they automatically give them to you?

Thanks for posting in the Community!
If you are wondering about Course Assessments in Canvas Student Pathways, there are a few ways to enroll students and this is done by the Teacher of the Course. So these are not able to be selected and enrolled by the students unfortunately.

Teachers can enroll students in the course manually or by sharing an invite link.

For Pathways, they can be manually enrolled, or sent an enrollment link as well:
