I want to give all the students in the class the chance to take it again, without seeing their previous answers or score. I actually want to do this for all 20 quizzes in the module, but I realize that may not be possible. Thank you!

It depends on your settings.
- If you want to hide everything, your best option is to hide grades in the gradebook, and set them to be posted manually. That is the only way to hide the "general answer comments" below each question, if you use them.
Remember to post the grades after the available until date.
See How do I select a grade posting policy for a cours... - Instructure Community - 588 - If you don't have "general answer comments", then it may be enough to uncheck the "Let Students See Their Quiz Responses" in the quiz settings.

To make it like a new quiz, I believe the only option would be to copy the quiz to a second course, delete the original, and then copy it back (or export it as a QTI, delete, and then re-import it).
Note that if you delete the original quiz, you can "undelete" it later, which should allow students to see their original attempts (though the quiz will show up twice, you may want to change its name).
