Where in Canvas can I find TA/faculty response time to student queries?

That depends on a lot of different factors. First, are you only interested in looking at responses that are handled through the Canvas Inbox, or are you considering all the other channels that an instructor or TA might communicate with students, such as email (which happens completely outside of Canvas)?
If you are only interested in the Canvas Inbox, then an administrator can view the Inbox of a particular instructor, look for questions from students, then look for the replies--or you might possibly use the Conversions API ( https://canvas.instructure.com/doc/api/conversations.html ) to pull a list of Inbox messages--but there is no report specifically giving statistics about response times.

There is not really a report in Canvas that gives that kind of information.
Wouldn't there be timestamps for all of these? Are these viewable?
