Our students submit an assignment each week, receiving a grade each week; but all in the same category. Currently, we use separate dropboxes/columns for each week, which becomes "messy" on the grade book. Is there a way to create a single assignment that is multi-week and able to receive a separate grade for each week?
What do you mean by "messy"?
Have you considered assignment groups? That way students will still have a grade for each weekly assignment, but Canvas calculates an extra column with the average grade of those assignments.

It's very cluttered. Ten weeks of the same assignment, but they need a grade each week. I know how to group students, but I'm not sure what you mean by assignment group.
I posted a link on how to make assignment groups above. Unfortunately, there will still be the 10 grades showing up in the gradebook, but there will also be an 11th one that averages those out.

For example, you can make an assignment group for "Project", which contains 10 assignments: "Project - Week 1", "Project - Week 2", and so on, until "Project - Week 10" (you can name them however you want, though keeping it consistent will help with tidiness).
The gradebook will still have the grades for each week's project, and then will also have a column for the total of the assignment group.
Since you aren't using them yet, I should tell you that assignment groups also have some other conveniences, mainly letting you drop the lowest grade(s), and giving weights to each assignment group.
