Since you are a Canvas administrator at your school, I'm assuming that you have purchased the paid version of Canvas. (The Free For Teachers version of Canvas does not have an administrator side to it.) Canvas does not have a "version"...as Instructure regularly pushes updates to the LMS on a monthly basis. They provide Canvas Release Notes and Canvas Deploy Notes here in the Community to let their users know what changes and updates are being made to the platform.
One of the first things you might want to do is visit this page...which has a set of admin tutorials:

Did your school purchase Canvas Studio? This is an add-on product from Instructure that places a "Studio" navigation button on the left-hand global navigation menu within Canvas. The reason I ask is because Studio has a feature built into it called "Insights" that lets you (as an admin) and instructors see if your students are watching videos you put into your Studio library. You can see, at a glance, if students are watching the entire video, or if they are skipping over parts. In Studio, you can upload you own original video content, or you can add YouTube/Vimeo links.
I would not recommend uploading video files to your course "Files" area...as that can quickly fill up your storage limit within the course...depending on how many videos you are have. Instead, if you don't have Studio, you can harvest the embed code from sites like YouTube or Vimeo and then include that embed code on content pages within your course. How do I embed media from an external source in the Rich Content Editor as an instructor? This way, the video stays on the YouTube or Vimeo server, and it doesn't take up storage space within your course.

I'm not really sure what to tell you about this one. Did you look in your "Courses" >> "All Courses" screen to see if they are listed there? Also, are you enrolled as the instructor in all three courses? How do I view all my Canvas courses as an instructor?
There are many other video tutorials that you can watch...found at Video Guide - Instructure Community. They are all separated out by user role, so you might want to watch some of those first before diving too deep into the written Guides. The written Guides can be found here: Canvas Guides - Instructure Community (click on one of the buttons for your specific role).

Sub-accounts do not create courses. Sub-accounts can be used in a variety of ways. For example, if a college had three campuses, the school could have three sub-accounts...one for each campus. Or, you could create multiple sub-accounts for the different program areas at your school...for example, a sub-account for "Nursing", a sub-account for "Manufacturing", and another sub-account for "Business & IT", for example. Then, when you create your course shells in Canvas, you can specify the sub-account that the course shell belongs in. Here' a good video that explains this better: Account Structure (Admins).
Courses can be created manually (one-by-one), but many schools will create course shells via SIS import. This is how they also send student/instructor enrollments. Much quicker than having to manually create courses and individual users. SIS Import Overview (Admins)
