I have tried to upload, mp4, mov. files and always the same ERROR message comes up. Already checked with the IT department in my company and they couldn't find anything wrong on my end...Please help, I have a new video assignment coming up and anxiety is already building up 😐

Can you please describe the process you are taking to upload the video to your assignment? It may be that you are uploading it incorrectly or that your personal file storage quota has been met ... preventing you from uploading large files such as videos. So, if you could provide some more detail on exactly how you are trying to upload the video, that would be great. Looking forward to hearing back from you soon!
I have tried dragging the file to the uploading area from my several different places like my desktop, the One Drive -and thought this was the problem but the IT guy said everything was okay on that end. The error message comes up not when I upload but when I try to submit instead.
Last video I dropboxed to my tutor so I could meet the deadline but I know this is not the best way to go about it. There is video due next week and I would like to solve this before that. ..Plus this entire course has video assignments so....

Of course, your instructor would be the one to let you know exactly how he/she wants you to submit the assignment, but hopefully these directions might be of some general help to you.

The exact error message will be really helpful, when it pops up again press the PrtScn button to grab the screenshot and then crop it down. I suspect the message appears for a short time, so you'll have to be quick pressing the button.
For your video submissions, you're adding them through the Rich Content Editor: How do I upload and embed a media file from my com... - Instructure Community - 381 (canvaslms.com) and then answering the rest of the questions rather than submitting it as the only artifact.
Today, I tried out uploading a video into the Rich Content Editor (in a discussion post) using Edge browser. I kept getting upload errors, that video was over 100MB though.

I went back to my video editing software (ClipChamp) and exported a lower quality video (720p) and got a smaller file, 84MB and tried the upload and embed again. When it did upload it was just spinning on the screen processing, and I waited 2 minutes (even longer than the length of my 1min 14sec video). Eventually, I switched into HTML mode using the </> symbol, saw the place holder message and then flipped back to RCE and the video appeared!
Meanwhile, though if your error happens when you submit and not when you upload, I'm not sure what to think. The Help guide referenced above does suggest hosting large videos on YouTube and then embedding them. This workaround may be your solution if your video file size is larger than expected. Sandra, we will figure this out for you. Video is a key component in demonstrating observable skills. Also, maybe your IT guy already had you try a different browser, but try Chrome or Firefox and see if you still get the same error when you submit.

there is a 500MB size limit for video assignment uploads to Canvas - might this be the issue?

As Chris mentioned, knowing what you're doing to upload the video will be helpful. If you can provide a screen shot of the error message that may also help us to figure out if it's your video, device/computer, browser, or general internet connection.
Meanwhile, if it's the computer giving you the error message, try uploading to your Files area in Canvas Mobile and then use that for your video submission.
