I'm an administrator at my university and we are trying to gather data on how many of our courses are utilizing certain features in Canvas such as discussion boards. We've discovered that the "discussions" analytic also tallies announcements so that isn't useful for our purposes. It also aggregates the data for all of the courses in a certain term. Is there a way to run a report or analytic which will give us the number of courses (or even better, a list of the courses) that used specific Canvas features? Right now, we are doing this work manually, going into each course page to visually see if the boards have been utilized and tracking them on an Excel sheet.

I was able to look into this for a bit.
I was not able to see that any analytic or report available would show information listed on this. I also checked API and did not see anything that would help you find these results.
A colleague of mine suggested that your institutions CSM "might" be able to gather this information for you.
