At my school we are being trained on Canvas. The instructor mentioned that we might want to opt out of the Inbox and have student communications sent to college email. I looked up on the Net how to do this, and found that you go to Account, then Settings, then "Conversations Inbox Opt Out," but that doesn't appear when I follow these instructions.
What should I do? I won't be in a live session in order to ask my question for a couple weeks.

I could be wrong but I believe the option that you are looking for might be something that is something custom at your school (possibly even created by other schools that have shared the code to do it) or at least not an option that is native to the Canvas LMS.

What is possible and is native to Canvas and its Inbox is to disable notifications so that you continue to receive the messages in your Canvas Inbox but you would not receive notifications about them in your email (whether your institution's email or any other email addresses that you add on your own). If that is what you are looking for, you can check out the How do I manage my Canvas notification settings? - Instructure Community - 615326 support article.
When making any adjustments to your notification settings, you would want to adjusts to what appears under "Conversations".
