To pull a deleted course out of the trash, you need the course number (the one you can find in the URL).
In the new admin analytics, you can conjure up a list of all the deleted courses. There's a bunch of info; course title, teachers, number of modules, etc, etc. But no course number.
So now I can verify that indeed someone deleted a course, but still have no way to bring it back to life, unless I have a log of all the courses ever created with their titles and numbers. I think I don't need to explain to you why I really don't want that kind of a log in my life...
Can the course number be added to the information items shown in this list? Or is this information already available and do I just need to contact one of the admins who actually admin (I just have these rights to test stuff)?
Thanks!

@KarlijnvanA ...
This might be a great request as a feature enhancement to Canvas! If you want, you can submit your idea by going to this link:
Canvas Ideas and Themes - Instructure Community (canvaslms.com)
Click on the "View and Submit Ideas" button on that page. Also, make sure to read through this information (the stuff under "Ideas and Themes"):
Community - Instructure Community (canvaslms.com)
I hope this will help in some way! Sing out if you have any questions about this...thanks!

As there were no further tips or tricks:
@KarlijnvanA Thanks for the explanation here! Will look into it.
@KarlijnvanA Not sure if you still need this, but I figure it'll be helpful if someone else stumbles on this thread. You can also use the course's SIS id to restore the course in Admin Tools. Just prepend it with "sis_course_id:" and click Find.
Fun fact: you can do this same strategy anywhere Canvas takes an ID including users, accounts, terms, sections, groups, etc. Here's a page that describes what magic incantations to enter into the URL if you don't know the Canvas id.
