Without the "mute" option, would students be able to actually view when I am in the process of commenting and grading their papers?

I understand the change in the grade posting and the option to hide grades.

My question still remains whether students would be able to view my

comments and grading as I am working on their papers? They could not do

that with the “mute” feature. Can they do that now that we no longer have

it?

Yes, whenever the assignment's gradebook column shows Manually as the grade posting policy, you can be sure students won't view grades and comments. From the Canvas Instructor Guide page  @Robbie_Grant  linked:

If you select a manual posting policy, grades will be hidden by default and will remain hidden until you have posted grades for the assignment.
