Unfortunately, you cannot group course cards on the dashboard. You can re-order them, but you can't organize them into groups or folders. Either of these Guides should be of help to you:

Full disclosure, I do not work for Instructure, so I have no inside insights as to if they are working on improvements to course cards on the Canvas dashboard. However, I can direct you towards their roadmap:

Not sure if either of these links will be of help to you, but I wanted to share them with you just in case.
I understand what you are asking for, but as mentioned what you want is not available at this time.
However, one way you could possibly add some organization to your dashboard is the following(I am assuming you are an instructor and not a student)
1) rearrange the courses on your dashboard in the groups that you want (i.e. all courses for group A go first, then all courses for group B, etc)
2) apply a color scheme to the course by group - this is one possibility
3) Apply a course image (from the settings page for each course) to each course in a group - I am thinking of using the same image for each course in the same group. When you do this, the color mentioned in 2 above becomes the color of the menu selection circle in the upper right hand corner.
It is some work on your part to do the above, but if you really want some sort of easily seen grouping, that is one way you can do it.

The lack of categorisation or grouping on the dashboard is a huge limitation and we are looking for a solution before we decide to move away from Canvas. We have hundreds of courses and the user experience is really poor where the students cant even see which course has been completed or not within the published courses.
Any help would be appreciated.
