Retaking a test

Does anyone know how to reassign a test if a student submits before they finish their test?

Yes- you can re-open the assessment and either allow the student to pick up where they left off, or completely start over.  Here is a link to the knowledge base article that explains the process.

Thank you for providing a solution!  I appreciate it.  However, I followed the link.  It does not apply at all to the version of Canvas I am using.  So, nothing about it really helps.  All I am allowed to do in my version is delete the student's score.  Does this re-set the test? (Don't know.)  I will have to see whether Canvas allows the student to enter into the test again.  There is no pop-up asking for confirmation.
