Thank you for contacting the Instructure Community. Unfortunately, there isn't an option in the Canvas inbox right now to view and restore messages you deleted manually. However, You will still receive notifications for those conversations threads -- even though you may have deleted them. Furthermore, once someone responds to that same thread, your deleted copy of the previous responses in the thread will be restored. In other words, you can see your previous messages if someone else responds to the same thread. There have been others asking for this and we recommend checking out the Ideas and Themes forum as we implement great ideas such as this that we find within the community.
