Hello,
I accidentally removed one of my users and therefore obviously his quizzes and all his grades were deleted.
Is there any way to get everything back?

I provided the response that I did because:
It sounds like you are using Canvas Free-for-Teacher. If you are, you should be able to add the user back - including restoring their access and their grades - by inviting them back into the course. You will need to know and use that user's/person's same email address when they were originally in the course. You may need to talk with or email that user/person to find out what the email address is.
The process for adding (inviting) someone to a course is described in the "How do I add users to a course?" guide at https://community.canvaslms.com/t5/Instructor-Guide/How-do-I-add-users-to-a-course/ta-p/1119.

It is possible to restore a deleted user account. Thanks a lot for the answer however I don't have an admin account. I have open a count as a teacher on my own, without a school or anything, with the mode "Free for teacher". There only me as a teacher and my students.

You are welcome, @Corinne-FLE. Sorry that I could not be of more help. It seems like something else more unique is going on.
The only other supported feature I can think of using (and it would not automatically restore their access to the course or their grades but you could see their grades) is to use the "Gradebook History" feature. There is documentation for it in the "How do I view the history of all grading changes in the Gradebook?" webpage at https://community.canvaslms.com/t5/Instructor-Guide/How-do-I-view-the-history-of-all-grading-changes....
You would not be able to use the "Student" filter option but you would be able to scroll through (which would continue to generate more entries) the history of all of the grades issued in the course.

It's didn't woked when she made a new inscription with the same email but it did when I send her an invitation.
