I was once in a district that used Canvas where we had student logs. These logs were attached to students' Canvas profiles. Teachers could add information to these logs, i.e. "called student's parent and left a message", or "assigned student study hall to make up missed exam", etc. Other teachers and Admin could view these logs.
How can I activate these logs? I do not seem to have the same function in my new district.

What you're describing is not a built-in function in Canvas. I suspect that your previous district was using an add-on tool that integrated with Canvas.
The only similar thing that is built into Canvas is a "notes" field which can be enabled under the gradebook settings.
