Hi @RosemarieGriesm,
In Canvas, the "Copy Course" option creates a new course shell and copies the material from the current course into it.
If you do not have permissions to create new courses on your school's Canvas server, you will not have a "Copy Course" option. Also, some schools (like mine) specifically hide the "Copy Course" option because new courses are automatically created each semester, and instructors can mistakenly create duplicate courses rather than copy materials to their (existing) course for the next semester.
If you need to copy materials from one existing Canvas course to another, you would go to the course where you want the materials to go and use the "Course Import" tool (see https://community.canvaslms.com/t5/Instructor-Guide/How-do-I-copy-content-from-another-Canvas-course... )
