At my university, we utilize office 365 to create and upload files. For over two years I would create a file in office 365 first before turning them into canvas. Now for unknown reasons I cannot do this, every time I go into the office 365 tab to upload assignment, it is grayed out and won't work. Any suggestions as how to fix this?

I sometimes have the same problem.
I can suggest a workaround: Go into Office 365 and download the file you need to submit.
Then turn in that file that you downloaded.

In addition to the workaround @RecycledElectro gave you, I'd recommend you report this to your school/institution Canvas team (usually in the eLearning / IT / Digital Education areas). There may be a misconfiguration in the Microsoft 365 integration that they can fix, or something else they could do to help troubleshoot the issue for you.
