Setting Default Grades Before Students Join

When I first create a course, before any students join, I want to set the default grade for any assignment to Zero or Incomplete so that when a student joins that default grade is automatically entered. I have searched for a way to do this but have been unsuccessful.
Please help.

Why do you want to assign zero or incomplete grades to students before they have started your class? I would suggest that you reconsider this plan. If I were one of your students, I would be very perplexed by seeing zero grades on assignments I haven't even begun. All you're going to end up with are lots of worried, upset students.
My suggestion would be to set a policy in which missing assignments are automatically given zeros. This is easy to do. Just click on the gear icon in the Gradebook.
