Depending on which quizzing interface you are using, these options are available to you:

• How do I grade a quiz in New Quizzes? - Instructure Community - 1068
• How do I grade quiz questions in SpeedGrader? - Instructure Community - 709

Is this what you are looking for?  Are you looking for more detail (such as reports) for your quizzes?  Please keep us posted here in the Community...thanks!

Not sure what you mean by "performance", but the Quiz Log shows the date/time of almost everything a student does in a quiz - start, answer question1, answer question 2,... end.

You have to enable the Quiz Log Auditing option on the Feature Options tab under Settings. Then the Quiz Log button appears on submitted quizzes in Speedgrader.
