Missing Quiz Logs

We are trying to access the quiz logs for our students. I noticed that when we review a quiz in speedgrader the quiz does not have a Quiz Logs button available to us to check those logs. Reading some of your documentation, I understand that this needs to be enabled within our account. I checked this and it is enabled.

Based on the documentation, this also needs to be enabled in each course. When i check the Feature options for the course, there is no option to enable Quiz Logs.

What steps can we take to have the quiz logs available to our instructors?

Have you by chance gotten this resolved yet? If not, here are a few things to consider:
1) Did you enable quiz log auditing after students already took the test? If so, quiz log auditing will not be available, as it wasn't enabled at the time to track the student's activity. However, this doesn't explain why it isn't available in the course's settings, which is why I am also thinking about number 2, as well.
2) Is this by chance enabled at the sub-account level, and not the root-account level? I wonder if you enabled and locked this at a sub-account level, and that sub-account isn't associated with the course that you're trying to turn logs on for? I'd double check to ensure that this isn't the case.
If you're able to verify that both of these aren't the case, I'd recommend reaching out to your CSM or Canvas Support for more help on getting quiz audit logging enabled.

The lack of option under the course settings is because you have it enabled and locked at the account level. Faculty don't get a choice to turn it on or off because the administrator has forced it on.
Likewise, if you have enabled and locked the quiz audit logs at the institution level, the option does not appear to sub-accounts.
If the following are all true, then your situation could be explained.
- The root account has the quiz audit log feature unlocked.
- A subaccount has the quiz audit log feature disabled and locked.
- A course is in the subaccount that has the feature disabled.
However, your images have the feature locked on. In order for this to work, you would have to be looking at the wrong subaccount for the course. That was Noah's #2 option.
To confirm, this is a Classic Quiz and not New Quiz? I don't use New Quizzes if I can help it, so I may have this wrong. But for New Quizzes, you have to be on the quiz (not SpeedGrader), click the Moderate link, and then you get the links for View log.
As @NoahBoswell mentioned, the quiz log feature is not retroactive. It must be enabled before the quiz is taken. On the flip side, the quiz logs are only retained for 6 months. There's also a warning that quiz log behavior does not include an accurate log for fill-in-multiple-blanks, matching, multiple answers, and multiple-dropdown questions. It seems that sometimes I don't see the View Log option, but I cannot find an instance of it right now. I thought that it may not be showing up for quizzes that are currently being taken, but I checked it in our beta instance (I don't have any of my students taking a quiz right now in production) and it does show the log. It doesn't show the results of the quiz and maybe that's what I was thinking of.
