I'm a school secretary. Does that make me an observer? Admin?

I am not the office manager. I am a secretary for the science department. My role is to keep student records, and assist the Science Department Coordinator.  I am learning about Canvas so that I can help my Department Coordinator.  Where should I start? What video tutorials should I start with?

Greetings  @coinej  Welcome to the Community and kudos to you for taking such a proactive role learning about Canvas! From what you describe, it sounds like the Admin and Instructor lessons/videos will be the most relevant to what you are likely to be asked to do in Canvas.
