I have 3 high school aged kids with several Canvas classes set up where I am an Observer. My dashboard is littered with old classes. How do I get rid of them or hide them?

Selecting the star next to specific courses is the correct step. You will want to star the courses from this year so those are the only ones displaying on your dashboard. (Note: this only works if there are current, live course for the semester). How do I customize my Courses list as an observer?
As far as removing them from the list under Courses, that is something that would have to be done by the institution. Starring the ones you want is the best alternative.

In the navigation menu, click Courses then All Courses. Are you able to select/deselect items in the list by adding/removing the star? Often, that helps Observers customize their dashboard.
How do I view all my Canvas courses as a student?
Also, with a release in the last couple of months, you should be able to view a single student at a time!
i went to Courses, All Courses and I see about 30 courses. None of the stars are checked, meaning, they are all white. When I click them, they do turn colors, and little box pops up to say "Click to remove from course". But when I click, the course is still there on my dashboard. Yes, I can see that I can view students one at at time, the problem is all the old courses littering MY desktop FROM them, that I was an Observer on and I can't remove them.
