How can I allow students to have access to completed quizzes for study purposes.

After students take a quiz or exam, they are unable to access them at a later date to use as study material.  This is especially true when using LockDown Browser.  I have seen posts saying to check the "Let students see their response" block, but I don't have that option. I'm obviously missing something.

The settings that you are listing in your post seem to be settings for an assignment, not a Canvas quiz.

What settings do you see if you look at the settings under Quizzes?

Ti piggyback on what @mzimmerman said, the area you tried to paste here is the assignment settings.  The setting you're referring to is found in the Build area of New Quizzes.  The How do I manage settings for a quiz in New Quizzes... - Instructure Community - 581 (canvaslms.com) guide should show you how to access and change the settings there.
