Has anyone had any issues with students grades dropping after putting in scores on assignments? The overall grade doesn't drop dramatically but it does drop some. If this has happened to anyone what were you able to do about it?

A little more information about the grade dropping would be helpful - i.e. what current average is, what grade was entered and what it dropped to. Do not need exact numbers, but generalities will do.
My guess is that what you are referring to is that students have had extra credit and have a current average above 100%. They then get a 100% on an assignment and their average drops slightly. That is to be expected because the 100% is less than their current average. As an exaggeration of this effect. Assume they have a 20 out of 10 currently (200%). They then get a 10/10 posted. there score is now 30/20 or 150% So even though they scored 100% on the assignment their overall percentage dropped from 200% to 150%.

Is there a way to stop canvas from dropping these grades? It is very confusing to students to see this happen and as an instructor I cannot see this on my computer until it is reported to me. As I have no extra credit on my grades, it appears to the student that she is being cheated out of her good grade.
If you are not giving extra credit in any way, then your students should not be seeing the effects described in the original question.
With a max score of 100% for any assignment, then the max score in the class is 100%. furthermore if an assignment grade is above their current average, then their average should go up. If the assignment grade is below their current average, then the average should go down.
If students are reporting that they got a 100% on an assignment and their grade went down, then there has to be extra credit somewhere - or a grade was entered incorrectly giving them a score above 100%.
