Is there a way to remove the link to the assignments in the gradebook?
We use ALEKS for assignments and exams. In the gradebook the link takes them directly to ALEKS. I have too many students that are not using the learning materials in the modules and just go to the gradebook and click on the assignment there, without reading anything in the modules.
I would like to remove the link in the gradebook only, but I do not see a way to do it.

Unfortunately, I don't know of a way to hide/disable those links in the Gradebook. You might need to just stress to your students the importance of reading through the content in your modules rather than going through the Gradebook. You could certainly hide the "Grades" page from students, but that would sort of defeat the purpose of them accessing their grades, so that's probably not the route you want to take.
You can require students to work through the items in the Module in sequential order. For pages, they have to mark them as done before they can move on to the next item. If they click on the assignment or exam from the the Gradebook, they will get a message informing them of the prerequisite requirements you have set up.
