Editing a Course that is not published yet

I am new to Canvas. I can see my upcoming courses, but cannot click on them to edit them. How do you edit a course that is not yet published? When I hover over it, it turns gray, but it will not let me click on the course and open it up to view and edit.

Assuming that you're the instructor of the course, it could be that the Term settings are set up where Teachers only have access to the course at certain times. The only people that would be able to know if this is the case would be your Canvas Admin(s). I would reach out to them and ask about the Term settings for your course.
