This is my first time using my canvas as my other courses have been with Ontario Learn. At what point do I have access to my course? is it the day of or a few days before when I log in I can't do anything with the course I am supposed to be starting in a week from today.

This isn't a question we'll likely be able to provide an exact answer to...as each school that uses Canvas as their LMS handles access to Canvas courses differently. Some schools may allow you a few days prior to the official course date to access the content. Other schools may only allow you to start the course on the official start date. And, it's usually up to the individual instructor to "publish" the course(s) so that students can get access to the content. Ultimately, this is a topic that you're going to need to discuss more with your Canvas admin at your school. Or, if you know who is in their Online Learning / eLearning / Distance Education team, that would be a great option, too. I found a few links on Mohawk's website that might be of help to you:
