Can gradebook settings for quizzes be edited after they have been imported into a new course?

An instructor has copied/imported all contents of a past course into a new one. Their original gradebook had a late grade posting policy applied, whereby students who have not made a submission by the due date will receive a score of 0 automatically. The column for the quizzes/assignments were last on automatic grade posting policy.
In the new course, the instructor had made the gradebook columns post grades manually and removed the late submission setting. The instructor updated the due dates for all assignments and quizzes, then proceeds to publish them for the new students to access.
To her horror, students automatically received a score of 0 and were notified about it immediately.
According to https://community.canvaslms.com/t5/Instructor-Guide/How-do-I-copy-content-from-another-Canvas-course...:
"If you copy all content or include course settings in selected content, the grade posting policy from the original course will override the grade posting policy in the new course. The participation dates from the original course will override the participation dates in the new course. Additionally, imported assignments will retain their assignment posting policy and participation dates from the original course."
It doesn't seem to make sense that the gradebook settings are forever set in stone, never to be edited again. As a workaround, the instructor is recreating all the assignments and quizzes to avoid this problem.
Are we missing something? Can they actually be edited?

You can change the gradebook settings at any point. The only problem would be if the late posting policy grade the students, there isn't a way to undo the process. You would need to change the policy for future assignments and manually fix the grades.
The correct process would be the following:
First, do the import.
During the import, either select to remove dates or adjust events and due dates.
Once the import is done. Go into your gradebook and set up all the policies for your preference. The missing submission policy, and the grade posting policy.
Once those are set up correctly, go to the assignments page and set up the dates as they need to be.
As far as the course for the teacher that has done it already, they can go to the gradebook and alter the policies to their preferences. But they need to manually fix the grades.
