Assign To Feature not working correctly

Courses offered are PD courses and typically run for 7 days at a time. Usually, courses start at NOON on a Thursday and end at NOON on the following Thursday.
We then have the main settings for the start date to match, but the end date is for the Monday following in order for instructors to complete grading or allow for extensions if granted.
Currently, we have two issues: when we use the assign to feature- and adjust the dates for the one or two people assigned for the extension, it is not extending the discussion unless we extend it for everyone.
Also, it is then moved to the CLOSED discussion area and we have to move it back to the OPENED. (sorry did not get a screen shot before it was moved to the opened section)
This is a new issue for us since the new discussions have been updated. And it seems like it is hit or miss. Sometimes it works correctly, others not.
Anyone else have this issue? A better work around then having to open it up for the whole class?
