Once anonymous grading is turned on for a New Quiz, it cannot be turned off, even if the quiz has not yet been published and no students have taken it. If this setting is accidentally enabled after the quiz is built, the whole quiz would need to be rebuilt in order to fix it.
Anonymous grading should be able to be turned on and off for New Quizzes, like with Assignments.
