As an instructor, how do I add myself as a student in group project? I saw "student" in the list of my student names when I created the groups but I did not think to add myself to a group. Now I no longer see "student" as an option.

Unfortunately, instructors cannot be added to student groups in a course. In order to access a student group that you've created for your course, please follow the instructions included in: How do I view content and student activity within a group as an instructor?.
That being said, there is a work-around that might work for you, but it involves you being dual-enrolled in your course as both an instructor AND a student at the same time. I've written a short blog about the process: Easy Student Group Access for Instructors.
