Extra quiz time before scheduled time

How do I add extra time at the beginning of a quiz for just one student before the scheduled time for the class?

You should be able to open the quiz and click "Moderate this quiz" on the right of the screen. Then select the individual student and click the pencil icon to the right of their name. That should allow you to give them extra time, additional attempts, etc.

If you are looking to make the availability window earlier for an individual student, click "Edit this quiz" and scroll down to the bottom of the page. Below the availability window and due date settings, you should see a plus sign. Click on the plus sign, and a new set of fields should open up. Type the student's name in the "Assign to:" field and then set the time and due date for that individual. The remaining students will still have the original settings (up above, you'll notice that it will change from "Assign to: Everyone" to "Everyone else").

I was able to set up my one student with their earlier time. But, this is for a midterm for a class with two sections and neither of the sections changed from "Assign to: Everyone" to "Everyone else" because one says "Assign to: ME 347-01" and the other says "Assign to: ME 347-02" - is this going to be a problem?
