 @jwhite8 , greetings! It depends on what you are having the students sign-up for.

Technically you could allow students to edit/post in a page in Canvas - How do I edit a page in a course? (you'd want to change the editing permissions). Here are the directions for students - How do I edit a course page as a student? 

Or, if the students are signing up for specific times to meet with you or to do something, you could use scheduler - How do I add a Scheduler appointment group in a course calendar? & https://community.canvaslms.com/docs/DOC-10580-4212716665 (for students).

What I personally do is use a Google doc that I link into the course and make public so that way students can be in and editing the page at the same time.

i want to build on the earlier question -- in blackboard i would use an wiki spreadsheet to create a place for students to sign up for articles in advance and to avoid duplications (didnt want two students doing the same article) - is there a way to do that in canvas?  i need to embed it in a discussion board
