I am band new to canvas.  My goal is to set up a sample class for my teachers so they can see what it looks like and how to navigate.  I am lost on where to start

This forum is full of helpful getting started resources for instructors. Here's a resource that help you get a course up and running quickly: Set Up Your Canvas Course in 30 minutes or Less 

Once you've mastered the basics, I encourage you to look through Guides: Canvas‌ and Guides: Video‌ for detailed instructions about specific features. In addition, depending on how your school has set up the global navigation, you might find links to training courses in your Help menu, as detailed in How do I use the Training Services Portal as an instructor?
