I'd like to know who has started my course, and it seems the 'pending' logo is there under People as the invitation to accept the course. However, some students seem to still have the pending logo but then notice they have spent time already working on the course. What's this pending invite about and how do I verify if a student has begun the course, or rather if they have not logged in at all?
From looking only at the 'Last Activity and Total Activity' column I guess, but wanted to make sure these were accurate enough before I drop them from the course.

As far as seeing what kinds of things your students might be doing in your course, you might be able to tell that by reviewing the access report: How do I view the course access report for an individual user? Hmm, I've never run into a pending invite with any kind of activity in a course; usually pending folks have never accepted the invite and never entered the course. You're right the Last Activity and Total Activity columns do let you know who is active in the course.
I just tried to send my student me a invite and not accept the invite, but when I entered the course the pending tag went away. I tried to get into a course that I got invited to by going to a direct URL and I got a quick pop-up message that I need to accept the invite to participate fully in the course.
Aha! and now I see that I have Last Activity date and the pending tag. Heh, so yeah I just never accepted the invite. As the instructor I would be tempted to remove the student since now I know they get that reminder alert on every page they visit when they haven't accepted the invite. Yeah it flashes for about 3 seconds, but it's enough to catch your attention when you keep visiting pages.
By the way, a pending student can see a discussion but there's no reply box.
