Does anyone know if there is a way for you to take an assessment that is a multiple choice paper and pencil test and turn into a  quiz?

Hello there, @Tom96 ...

One way to move question from a paper quiz to an electronic quiz in Canvas is to use the Respondus software (this is a paid product).  I've written a lengthy blog on the subject, and you can find it here: Batch Uploading Quiz Questions with Respondus - Canvas Community.
