We have a student that was originally in an inseat class.  We have moved all courses to Online with the COVID-19 issues.  The student does not have Internet.  We are trying to find the best way to get the class content.  I was able to find a way to get all the files downloaded and the instructor will get that to the student.  But I have not found a way to get the Discussions, Quizzes and Assignments printed out in a way that takes minimal effort.  Is there any suggestions?

I feel for your student and instructor in this situation of inability to access course materials. Depending on where you are in the country (Ohio?), there may be cell providers or cable providers offering free wifi hotspots for internet access.

Are there programs available to help make Internet service more affordable?

At any rate, there are a couple of options for viewing (not interacting with) course information offline:

How do I view course content offline as an HTML file as a student? 

How do I view course content offline as an ePub file as a student? 

With both of those options, you or your Canvas admin would need to do some configuration.

How do I allow course content to be exported as an offline HTML file? 

How do I change the format of a course ePub export file? 

My advice would be to go the offline HTML route, put it on a flash drive and mail it to the student. The HTML will give a more familiar experience when the student does get internet access since it works with the browser. But... links to YouTube videos and what not will of course not work.
