How does Canvas enforce the minimum or maximum word limit on an essay question?
Does it simply just require the user to add more words (if under) before they can submit? Does it prevent the user from typing more?

Hello,
I believe setting a word limit for an Essay question is an option only in the New Quizzes tool in Canvas and not a feature of Classic Quizzes. In my testing, I observed that students can submit the Essay question even if they exceed the word limit or do not reach the minimum limit. I believe Canvas does not prevent the students from typing more than the maximum limit or less than the minimum limit. However, Canvas does display a message saying "Must use at least XXX words" or "Maximum words exceeded" in Student's view. May also display the same message in the Instructor's view for the instructor to make a judgement based on the word limit and grade accordingly.
Hope this helps!
Thanks!
Pallavi
