Is there a way to share a Word document or another text document for all students to see and edit online during the teacher presentation so that we can all take notes on the same document? This will allow us to share the effort and work together on one document, rather that each student taking notes separately and individually, duplicating the effort. This can already be done with Google Docs and Dropbox, but can we do it internally, live, within Canvas?

Pablo,
Yes this can be done using the Collaborate course navigation option. Two options with Collaborate are Google Apps or Office 365. If you school has not already set up these integrations you should be able to do so by going to Settings, App and then searching for them. Read the set up instructions carefully and it will tell you how you enable it just in your course if you like. Keep in mind that the students will need to have either Google or Office 365 accounts for this to work.
I'm including a link below taking you to guide pages for both Google and Office 365 collaborations. Hopefully this will be enough to get you started.
Rick
