I want to be able to download the registration data for people that have signed up for a course so that I can follow up with them via email later and communicate new offers, but cannot see how I can do that.  A simple excel file is really all I want.

Sorry to see that your question has been sitting out here for so long without a response.  If I understand your question correctly, you'd like to get a course listing of students who have enrolled/registered for one of your Canvas courses.  If you have "New Analytics" enabled, you should be able to download a "Class Roster" as a CSV file which includes student e-mail addresses.  Check out this Guide: How do I view and download reports in New Analytics?.
