If I create a New Quiz, can I still keep using the ones I created in Classic mode?

You can use both types of quizzes in a course for now.

Canvas has announced end of life for classic/legacy quizzes, but you can continue to use them until then: https://community.canvaslms.com/docs/DOC-26789

We just began using Canvas 3 weeks ago.  I set default to "New" thinking "Classic" was going away quickly, but found out that it's not until 2025?  I'd like to go back and see what the advantages of Classic vs New are?  Is there a way to "undefault" this?

Several in my department have been using Classic and are sad it's going away.
