Is there any way for me to receive an email notification for students who turn in assignments after they are due??

Good afternoon, @campbell9940 ...

When you go to your "Account" >> "Notifications" screen in Canvas, you have two rows for "All Submissions" and "Late Grading".  (You can hover your mouse cursor over those words to see a pop-up bubble that describes what they do.)  You should be able to set your e-mail notifications to get notified as you want.  See these Guides for more information:
