I want to give the exact same quiz again and do not want them to have access to the old one.

Howdy,

If you add an "Until" date to the quiz settings, this should prevent students from interacting with that quiz (to take if they missed it, etc). To prevent them from seeing responses, you need to uncheck "Let students see quiz responses" and "let students see correct answers" etc.
