How do I view all my Canvas courses as a student? 

If you do not see all your courses listed on this screen yet you know that you are either assigned as the instructor or have enrolled in the courses as a student, then you would need to consult with your school's local Canvas administrator or your school's Online Learning department to see why you may or may not have access to your courses just yet.

Approaching this question from an admin/instruction view I I saw the question while looking to see what options Canvas had for designating what time slot a class had as part of its schedule.  At first glance it seems most schools(including ours) add some hint in the Name like  Bio-MWF or Bio-A ( for A days on an A-B schedule)  However we were looking for a system that show class schedule on the calendar. That would help when merging with other even calendars. 

Any work going on in that area?
