One of my students uploaded a pages file, which cannot be scanned by Turnitin. Do I need to reset the assignment for her or can she just upload the assignment again. I don't see how to delete her first upload.

Hi @dietrich_regina Welcome to the Canvas Community; it's been a busy time in the Community and it's possible you've already figured out your own solution to this. For the record, one can never remove earlier submissions from Canvas. Even I, as a Canvas administrator, cannot do this. Students, however, can always re-submit an assignment so long as it is not past the "Until" date set in the assignment....if any was set, to begin with. If they return to the assignment, they will see a Re-submit Assignment button, as pictured on the last screen capture here: https://community.canvaslms.com/docs/DOC-9539-421241972
Given that the original (Pages) submission was never processed by Turnitin, to begin with, I would not foresee any issues on the Turnitin end with this, either.
I hope this helps a bit, Regina...even if belatedly.
