Yes. The quickest way to do this is by using the Set Default Grade feature. Depending on which gradebook you're currently using, here are the instructions:

If you've already graded all of the submissions, make sure not to enable the Overwrite already-entered grades checkbox during this process.

Hi

I also like to use a Missing Submission Policy to catch the missing assignments after the due date.I set it to 0% and let Canvas take care of the rest.

I do what ishar-uw‌ does. Just be aware this doesn't work on external LTI assignments like New Quizzes. I think it also doesn't work for "On Paper" or "No submission" assignments. It's pretty easy to check if it worked--just scan the gradebook and look for dashes. If there's a dash, Canvas won't count that for or against the student's grade, and it'll need to manually be changed to a 0.
