I have a bunch of old courses on my dashboard and in my class list. How do I get rid of them or hide them?

You'll need to conclude the course first: How do I conclude a course at the end of a term as an instructor?
Once you have concluded it you can hide it through your Courses menu:
Click "All Courses", then deselect the star next to the one you wish to hide:

I'm not the instructor. Do you know how to do it as the student?
You'll need to contact your instructor. Once they have removed them from their dashboard they should drop off from yours.
If not, you should be able to using the above instructions after the info about concluding courses.

Depending on the policies that have been set by your school, you may not be able to completely delete the courses from your Canvas account. However, you can customize your Canvas Dashboard to only show those classes that you want to appear while keeping your past courses on the "All Courses" screen. Please check out: https://community.canvaslms.com/docs/DOC-10570-4212710327 You might want to contact your school's local Canvas administrator or your schools Online Learning / eLearning department to see what policies they have in place for deleting courses.
