Canvas does not have a separate button called "Exams". At our Technical College, when I build quizzes, tests, or exams for our faculty, everything falls under the "Quizzes" course navigation button, and we normally just give them the appropriate titles... such as "Objective Test" or "Final Exam". I've not heard any feedback (positive or negative) that this is an issue for our faculty or students.
There is a LTI external tool app called the Redirect Tool, but I'm not exactly sure if it would meet all your needs. Even if you used the Redirect Tool to make a button that said "Exams" instead of "Quizzes", once you go to that area of your course, it would still have terminology related to "Quizzes" displayed in various locations.
Another option, though not very recommended, would be to talk with your school's local Canvas administrator or someone from your school's Online Learning/eLearning department. Canvas administrators have the ability to customize/configure CSS (Cascading Style Sheet) and JavaScript global files. It may be possible to change the "Quizzes" button to "Exams" that way. But, this would change the name of the button for every single course in your school's Canvas environment...and you may have colleagues who like and/or don't mind the name "Quizzes" for the button. Also, if this was changed globally for all people at your school, then you'd have to make sure that everyone knows you are referring to "Quizzes" instead of "Exams" if people are ever looking at the "how to" Guides here in the Community...as everything is referred to as "Quizzes".
